Salford’s Pippa Middlehurst, also known by her Instagram moniker Pippy Eats, was the winner of the first series of BBC1’s Britain’s Best Home Cook in 2018.

Her interest in Chinese cookery began when she was a young child and her grandfather would take her for dim sum. Over the years, it blossomed into a passion.

Pippa has been learning about East and South-East Asian cookery for over 15 years, and attended Lanzhou Noodle School in 2019 whilst travelling in China.

She hosts regular sell-out workshops, masterclasses and supper clubs across the UK with a focus on noodles, dumplings and broths, and in 2020, Pippa published her first book, called Dumplings and Noodles.

This week she has published her second book, Bowls and Broths – which coincides nicely with the news that her new venture Noodlehaus, a permanent space in the heart of the city that celebrates creativity, community, sharing and learning, is launching soon in New Islington.

Bowls and Broths is a super-fresh collection of broth-based recipes that will teach you how to season, layer and create versatile and exciting dishes from scratch.

It tells the story of building a bowl from the bottom up – with seasoning and sauce, crunchy bits and fresh herbs, aromatics and toppings – and offers accessible recipes that use these building blocks to maximise the power of ingredients, texture and flavour.

With beautiful photography and useful step-by-step explanations, this book is a must-have for beginners interested in the basics or more experienced cooks wanting to geek out over the science of broth.

Whether you fancy Kimchi & Bacon Udon, Mapo Tofu Dumplings or Miso Chicken Claypot Rice, Pippa’s vibrant recipes will satisfy every craving for either a weekend feast or a quick weeknight supper.

And noodle fans will be delighted to hear that work is starting soon on Noodlehaus, which Pippa hopes will be open later this year.

“It’s been a rocky couple of months but we can finally see the light at the end of the tunnel and CANNOT wait to open the doors to Noodlehaus,” said Pippy in an announcement on Instagram.

“We’ll be picking up the keys to our new home this month and (fingers crossed) work will begin in September to be completed in late 2021.”

Bowls & Broths by Pippa Middlehurst is out now, published by Quadrille, priced £16.99. Photography is by India Hobson and Magnus Edmondson.
