It was rumoured earlier this year – and now Rudy’s Neapolitan Pizza has confirmed it will bring authentic Neapolitan pizza to Stockton Heath this spring.

Rudy’s, which launched in Ancoats and has another Manchester branch on Peter Street next to Albert’s Schloss, has expanded in recent years with sites in Liverpool, Leeds, Birmingham and Sale.

The new Cheshire site will be the seventh restaurant for the popular pizza brand.

Rudy’s Stockton Heath will be a relaxed neighbourhood pizzeria situated in the former Barclays Bank building on 19 Walton Rd, in the heart of the town centre.

Born out of passion for pizza, Rudy’s follows the authentic Neapolitan tradition of pizza making, serving classic recipes such as Marinara, Margherita and Calabrese  – all originating from Naples, the birthplace of pizza.

Believing Neapolitan pizza to be the best in the world, Rudy’s dough is made fresh daily using Caputo ‘00’ flour which ferments for at least 24 hours, alongside the best quality ingredients imported twice a week from Naples, including San Marzano tomatoes grown on fields next to Mount Vesuvius, and Fior di Latte mozzarella.

They take authentic Neapolitan technique seriously, too.

The dough is made fresh on site every day and cooked in wood fired ovens for just 60 seconds, all in accordance with Neapolitan pizza tradition, leaving it soft and floppy with a leopard patterned cornichon (crust).

“I’m really excited about living in Stockton Heath and getting to know the area more,” said Beth Sinclair, general manager of Rudy’s Stockton Heath.

“It won’t be long before we are able to fire up the oven and serve delicious Neapolitan pizza.

“As a team we can’t wait to meet the locals and neighbours and become part of town life.”

Rudy’s will open in the former Barclays Bank building on 19 Walton Rd, Stockton Heath this spring – you can find out more here rudyspizza.co.uk/stockton. Rudy’s are now recruiting pizzaiolis and front-of-house team – those interested should apply here rudyspizza.co.uk/joinus.
