Head of Culinary Matt Downes explains that creating these dishes go beyond just flavour or presentation. It’s about storytelling, an approach that sets Tattu apart.
“Our creative process starts with the story we want to tell. Inspiration can come from many places—memories, emotions, or the changing seasons. Once we establish the narrative, we think about how we can represent that story through flavours.
“Then comes the visual aspect. The food must look as beautiful as it tastes; every element must work together to enhance the experience,” said Matt.

Made with Grey Goose Vodka, Briottet Peach, winter melon, and lemon juice, this drink arrives dusted in an iridescent blue sugar that seems to glow against the restaurant’s moody, atmospheric lighting. The subtle sweetness of the Azure offers a delicate introduction to the evening, a promise of the bold flavours to come.

Next, the X.O Spiced Pork Belly offers comfort food elevated to new heights. Slow-cooked to tender perfection with a crispy, caramelised exterior, this dish is bathed in a rich X.O sauce—a delightful fusion of dried seafood, chilli, and garlic that packs a punch. The depth of flavour is rich and warming, making it the perfect dish to savour as winter settles in.
One of the many highlights of the winter menu is the Emperor’s Duck Breast. This dish feels like dining with royalty. The duck breast is cooked to pink perfection, its natural richness heightened by a luscious plum glaze.

The Sea Bass and King Prawn Clay Pot is the ultimate winter dish—a steaming pot of comfort. If there’s one dish that embodies the spirit of winter, it’s this. Served steaming, the clay pot’s aroma immediately warms the soul: the scent of fresh ginger and spring onion wafting upwards. The sea bass is tender and flaky, its delicate flavour is beautifully enhanced by the aromatic broth.
Plump king prawns add a burst of sweetness, while prawn and scallop dumplings surprise with their rich seafood filling. The broth ties everything together, its depth and warmth making every spoonful a comforting embrace. Truly, this is the standout dish.
Tattu’s Spicy Egg noodles are bursting with personality. Springy and perfectly coated in a bold, spicy sauce, they deliver just enough heat to keep you coming back for more.
