But this November, the neighbourhood welcomes a fresh new face: Bruco.
Opening its doors on Thursday, November 21st, 2024, this Italian restaurant and wine bar promises to capture the warmth and authenticity of Italian dining while adding its own unique flair.
Bruco will sit on the former site of beloved bakery Trove.
At the heart of this new venture is Ethan Harvey, a passionate hospitality enthusiast who combines his love for food with an impeccable eye for design.
Having lived in Manchester for five years, Ethan feels a deep connection to the area and has always dreamed of contributing something meaningful to its ever-growing foodie scene.
Ethan said: “I’m passionate about all things Ancoats. It’s a beautiful, relaxing place that has become a real foodie destination. It felt like the perfect spot for Bruco. Where better to launch an Italian restaurant than little Italy?”

For Ethan, opening Bruco is the culmination of a lifelong dream.
“People might think I’m crazy for stepping into the restaurant world in its current environment but this has always been a bit of a pipe dream for me.
“I’m a massive foodie. I’ve worked in hospitality on and off for years, and it’s something I’ve always been passionate about. Seeing it all come together now feels surreal.”
Ethan’s expertise in interior design shines through in the restaurant’s stunning decor, a blend of elegance and warmth that immediately invites you in. “I wanted Bruco to feel like an extension of my home,” Ethan explained.
“Somewhere cosy and welcoming, but also beautiful. We’ve paid attention to every detail to create a space that reflects the vibrancy of Ancoats while offering a little slice of Italy.”

Of course, a restaurant is only as good as its food, and Bruco delivers on every front.
Leading the kitchen is Head Chef Cosimo Torlo, who hails from Muro Lucano, just outside Naples. Cosimo’s passion for Italian cuisine is evident in every dish, from the indulgent slow-cooked short rib lasagna to the roast squash gnocchi with honey and sage.
“Our chef brings so much heart and authenticity to the menu,” Ethan said proudly.
“Take the lasagna, for example—it’s based on a recipe he learned from his family growing up in Italy. Everything we serve is about honouring traditional Italian cooking while keeping it approachable.”
The menu is designed for sharing, with prices ranging from £4 to £20, making it accessible without compromising on quality. And it’s not just the food that stands out. Bruco’s wine list is a labour of love, featuring carefully selected Italian wines, many from small vineyards that are exclusive to their supplier.
“Our house wine is just £24 a bottle, but it’s genuinely good,” Ethan emphasised.
“That was really important to me—affordable, great quality options. We’ve also got a fantastic Spritz cocktail menu, including our specialty Limoncello Spritz.
“It’s all about giving people an experience they’ll remember.”

To ensure Bruco’s success, Ethan brought in industry veteran Mike Jennings, whose 27 years of experience, including time spent in Michelin-starred kitchens, has been instrumental in shaping the restaurant’s menu and operations.
“Mike has been incredible,” Ethan said. “His knowledge and attention to detail are second to none. He’s helped us create something really special, and I couldn’t have done it without him.”
Mike shares Ethan’s enthusiasm for the project: “Bruco will be an excellent addition to Ancoats, and we can’t wait to welcome diners from all over to enjoy our little taste of Italy.”

When asked why people should visit Bruco, Ethan’s answer is simple: “It’s a really good, relaxed environment with excellent food at great value. We’re not trying to be flashy or over the top—just a cosy space where people can enjoy authentic Italian cooking and great wine.
“It’s the kind of place I’ve always wanted to go to, and I hope others feel the same.”
With its doors now open, Bruco is ready to welcome Manchester’s food lovers for breakfast, lunch, or dinner, Wednesday through Sunday, from 8am to midnight.
