Take a sneak peek at the new spring menus at Spinningfields favourite The Refinery

The Refinery in Spinningfields is a sleek and stylish refuge from the hustle and bustle of Manchester city centre.

It’s popular with corporates and weekend shoppers alike, thanks to its carefully curated seasonal menus and relaxed, stylish atmosphere, lovingly furnished interior and ambient lighting,

With spring just around the corner, the Refinery team have prepared a new range of menus for the new season. We took a sneak peek at the refresh ahead of the launch on Monday.

The new menu ups the ante for herbivores with lots of delicious new meat-free options. Favourites such as The Refinery’s roast cauliflower and pesto fettuccine remain, bolstered by a host of fresh and exciting new salads bursting with colour and flavour.

It’s a celebration of seasonal flavour and locally sourced ingredients, with a mixture of influences on offer, from classic English staples to the Mediterranean flavours of French and Italian cuisine.

And acclaimed chef Peter Gordon has created five new signature salads inspired by his book Savour – Salads For All Seasons.

Perfectly showcasing both Peter’s and The Refinery’s signature style, these salads fuse international ingredients and flavours to create inventive and colourful dishes.

It’s a vegan’s and veggie’s delight. Avocado hummus, roast cauliflower with seeds, olives, broad beans, peas and olive tapenade. Fregola with asparagus, shiitake mushrooms & walnuts. Super-fresh cherry tomatoes with orange, fennel, macadamia nuts and coriander. Baby beetroot with broad beans, goat’s curd and hazelnuts. Kohlrabi with watermelon, tofu, mangetout and candied walnuts.

There are also some new, delicious French-inspired dishes to get stuck into. From succulent grilled poisson to sea bass with beurre blanc, you’ll be spoilt for choice.

Alongside the new glorious veggie and vegan dishes, The Refinery’s sweet sippers have to make it onto the highlight list. The sweet dessert cocktail list has seen a refresh for the season with new saliva-inducing concoctions such as crème brulee and chocolate brownie martinis propping up Kate Moss’s favourite – the espresso martini.

We can’t wait to get out on the terrace and lose a few hours sipping on these beauties in the sunshine.

The kitchen also has some mouthwatering, vegan friendly desserts on offer, delicately paired with fruit sorbets. We’re looking at you, toffee-roasted pineapple served with passion fruit sorbet.

With any menu refresh, there are certain staples that just can’t be messed with. Here the stickers are mostly the English classics (served with a twist, of course) and the Italian snacks. Think locally sourced and hand cut steaks, bruschetta, beer battered haddock and chips, fish pie with a cheddar potato crust, pasta, bangers and mash, the wagyu burger and, of course, the famous fries.

Other nibbling staples, such as the sharing platters and small plates, have also stayed well and truly put for now. So no need to panic, you can still count on your favourite prawn lollipops and salt and pepper squid being there for you next time you head in for cocktails with your squad.

Three and four course set menus are available for large groups and private hires, priced at £25pp and £35pp respectively, as well as a fab breakfast and brunch menus with all the egg and waffle variations you can dream of.

And if you head in for breakfast on payday Friday, you get 50% off.
