Six by Nico announces new menu – and it’s all about the Alps

Six by Nico, the Spring Gardens restaurant which changes its menu every six weeks, has announced the theme for its next menu from mid-February: the Alps.

Chef Nico Simeone will aim to bring a refined take on the comforting cuisine found in the mountainous regions of Europe for the new six-course menu – and he’s hoping to whizz diners across the snow kissed mountain-regions of France, Germany, Switzerland, Austria and Italy with each bite.

The chef hopes his rugged menu will warm up the cold dark days, with comforting Alpine dishes conjuring up images of snowy landscapes, rolling hills, cosy lodges, Mont Blanc, cheese fondue, cured meats, snow sports and apres-ski.

And, of course, there will be mountains of meat and melted cheese – though vegetarians can rest assured there is a veggie alternative available for each dish.

The new six course tasting menu starts with a Swiss raclette cheese fondue with crispy pigs head and quince, followed by ‘salmon on the Rhine’ with pumpkin, horseradish emulsion, and apple and dill dressing.

Tartiflette, a hearty dish from the Alps made with potatoes, reblochon cheese, lardons and onions, is given a twist with barbecued broccoli and pickled walnut, while a risotto du crozets (a small flat square-shaped pasta originally made in the Savoie region in southeast France) includes hen of the woods mushroom, rich truffle and pesto bianco.

Chicken and pork farcon, the comforting Savoyard potato-heavy dish, comes with hispi cabbage, sauerkraut ketchup and meat sauce.

Pudding is, of course, snowballs: coconut and pistachio parfait with passion fruit caramel and chargrilled pineapple. 

There will also be the option for diners to add additional snacks – including more cheese in the form of taleggio and emmental.

The Alps is the first menu to be served at all of Nico’s restaurants at the same time, with his sixth and most recent restaurant launched in Liverpool in November 2019.

“As we endure darker days during the winter months, ‘the Alps’ themed tasting menu will give guests the opportunity to enjoy a respite of rich and comforting dishes,” says chef Nico.

“With Alpine cuisine categorised by the different regions of the Alps, we wanted to create a menu of comfort and resilience, inspired by everything we know and love about the stunning Alps region, seeking comfort in its rich and wonderful cuisine.”

The Alps menu at Six by Nico, Spring Gardens, will run from Tuesday 18th February until Sunday 28th March 2020. It’s priced from £29 per person, with the option to add a drinks pairing for an additional £26. A vegetarian menu is available.
