Legendary Manchester restaurant to undergo “huge transformation” under new ownership

Opening its doors back in 2011 through Living Ventures Group, Australasia was a personal favourite of the late Tim Bacon and will forever have a legacy as one of the city’s favourite restaurants.

In January, Orka Koncepts acquired the Manchester-based Australasia and Grand Pacific concepts from Living Ventures. The two sites were taken on by Orka Koncepts, which already operates the Dear Sailor bar and the Hessian events catering business in the city.

New menu

Re-opening in April, Australasia will have an entirely new menu masterminded by new Head Chef Lucie Sainerova, with a focus on open-flame cooking and sharing plates.

At the heart of this transformation is Head Chef Lucie Sainerova (previously Executive Head Chef Novikov International and Raffles International), whose expertise and creative vision make her one of the UK’s most sought-after culinary talents. Under her guidance, Australasia will introduce a menu that celebrates the bold, vibrant flavours of the Pacific Rim, with a focus on open-flame cooking and the best local produce and seasonal ingredients, designed for sharing.

Restaurant revamp

The interiors will also be refreshed to create a rustic and natural oasis – transporting guests to a paradise far from North England.

The restaurant itself will also undergo a stunning revamp, drawing inspiration from the sun-drenched shores of the Pacific. The new design will create a natural, organic sanctuary – somewhere to escape and unwind from the urban rush.

As dusk falls, evenings will begin with the soft, elegant sounds of a baby grand piano, serenading early evening drinkers and diners. As the night deepens, live musicians and DJs carefully curate immersive soundscapes, enhancing the atmosphere without overpowering it – an essential ingredient in the new Australasia experience.

Australasia’s bar will also see a rebirth as a standalone destination once again. No longer just a prelude to dining, the reimagined space will become one of the city’s hottest spots. Expect innovative mixology and an atmosphere that invites connection and celebration.
