New Wave Ramen launch kickstarter to help fund new Tib Lane restaurant

Manchester looks set to get another tasty ramen hotspot on Tib Lane, as 'New Wave Ramen' lands in town.

Located at 16 Tib Lane, nestled between King Street and Manchester Town Hall, the two-floor establishment promises to offer a fine selection of mouthwatering Tokyo Ramen during the day.

In the evenings, the menu broadens out to a family-style menu of small plates and sharing dishes cooked over sustainable charcoal by night.

Tokyo Ramen

Drawing inspiration from Japanese culinary traditions, the daytime menu will feature signature ramen bowls, creatively crafted to represent the latest trends in Tokyo’s ramen scene.

The founders, Phil Cook, Matt Walsh, and Elliott Williams, united over a passion for Japanese culture and a love for ramen.

Binchotan-fired Grill

As the sun sets, the restaurant will transform into a hub of flavours, serving up small plates from the binchotan-fired grill, sustainable seafood, and an array of enticing plant-based options sourced from local growers.

Behind the vision of New Wave Ramen are the seasoned restaurateurs Phil Cook, formerly of CBRB, and Matt Walsh, the mastermind behind Tender Cow.

Phil Cook, a chef and noodle maker, honed his craft and perfected ramen while working in Japanese restaurants and as a noodle maker for restaurants across the country.

Joining forces with them is Elliott Williams, a DJ and member of the renowned UK band Editors, underscoring the link between food and music cultures, particularly with ramen.

The trio aims to create a captivating ambience for patrons, enhanced by an eclectic playlist, that complements the delicious offerings.

The team at New Wave Ramen is a collective of culinary talents from Michelin-starred restaurants and acclaimed ramen shops across Europe.

Their expertise and passion for Japanese food and culture are bound to leave a lasting impression on diners when the restaurant opens its doors in October.

New Wave Ramen has faced challenges with pandemic restrictions but has emerged stronger.

A Commitment to Japanese Hospitality

Central to New Wave Ramen’s ethos is the commitment to embodying Japanese hospitality.

Embracing the principles of Omotenashi, the restaurant aims to deliver the highest level of service without any gimmicks.

Guests can expect a fun and relaxed atmosphere coupled with exceptional food and drinks.

New Wave Ramen has already earned recognition for its original site at Mackie Mayor, 1 Eagle Street, Manchester.

Building on its success, the team is expanding to the new location on Tib Lane, introducing even more food enthusiasts to their delectable offerings.

In addition to the excitement of the upcoming opening, New Wave Ramen has announced a crowdfunding campaign scheduled to launch on August 1st.

The new venue will allow them to expand beyond ramen and offer a more extensive evening menu of sharing style izakaya dishes cooked over sustainable charcoal, along with a strong vegetarian offering.

Planning for an ‘intimate dining experience’ the space on Tib Lane will feature dimmed lights, candles, and a thoughtfully curated drinks menu with an open kitchen, counter dining, and a custom-built noodle room for making fresh noodles in-house daily.

The Kickstarter campaign aims to raise £35,000 to cover final build costs and finishing touches for the restaurant’s opening in October.

Backers can support the campaign by buying bowls of ramen in advance and receiving additional rewards, event invitations, and merchandise.

The main challenge for the project is completing and financing the fit-out for the opening in October, and they believe involving the community through the Kickstarter campaign will benefit both the restaurant and its future customers.
