Manchester food and drink heroes team up to create a very special gin-filled brunch

MIMOD’s Kitchen, the Manchester pop-up that believes in brunch, has teamed up with Manchester Three Rivers to celebrate the unparalleled flavour of their gin with a special cocktail-paired brunch event at Green Quarter’s RedbankCo.

Riffing on the gin’s name, each of the three courses is inspired by Manchester’s rivers – the Medlock, Irwell and the Irk.

Guests lucky enough to bag themselves a ticket will begin with a first course inspired by the River Irk, comprised of gin-cured gravlax, homemade rye crackers, rosemary and black pepper aioli and cucumber radish slaw, with gin pickled fennel hearts for vegetarian diners.

This will be paired with Redbank’s twist on the classic Ramos Fizz: classically made with fresh lemon and lime, orange blossom water, egg white, vanilla, cream, and gin (of course).

Redbank cocktail creator Peter says they intend to switch-up the classic spec to tailor it to MIMOD’s first course:

“We’ll be changing out the cream for almond milk and enhancing the vanilla, making it lighter and sweeter to contrast with the oils of the fish and the heat of the black pepper and rye.”

The next course will celebrate the River Irwell, with guests enjoying poached eggs on a homemade rosti alongside drunken tomato and apricot chutney, plus smoked pork cheek (or grilled halloumi). This will be paired with a long elderflower and grapefruit cocktail and finished with a tarragon garnish.

Last but not least, prepare for a dessert designed to honour the river Medlock. Composed of sweet gin-soaked cherry jam and curd strudel, served with an almond and oat crust and topped with freshly toasted oats (a key botanical in the gin which nods to Manchester’s industrial history), designed to accentuate Manchester Three Rivers Gin’s creamy flavour in the final brunch cocktail: a very cherry twist on a Clover Club.

Three Rivers made history when they created Manchester’s first city centre gin distillery back in 2016 and still hand produce every batch of their award-winning product to this day.

Beyond passionate about their gin, the team behind the high end spirit also launched their award-winning gin experience, which soon rocketed to the top of TripAdvisor’s list of things to do in Manchester.

Bringing them together with the cocktail making prowess of Redbank Co and the cooking expertise of MIMOD’s Kitchen looks like a recipe for an event to remember.

“It’s amazing to work with a brand like Manchester Three Rivers,” says MIMOD kitchen founder Steph.

“Not only is their product amazing and their distillery our neighbour on Redbank, it’s been fascinating to learn about the complex botanicals and flavours the team have made so much effort to blend perfectly. Also the three businesses bringing this event to life are all so passionate about our amazing city!”
