Gin and tonics were afterthought drinks for Manchester’s bartenders a couple of years ago. Had you ordered one back then, virtually every bar in the city would have handed you a glass of Beefeater and a Schweppes tonic water with a sorry looking lemon wedge on the rim.
Since the craft cocktail explosion, however, it’s become a whole new game. We’ve gone from the odd tipple now and again to sales of the stuff topping £1 billion last year and there’s now even a day dedicated to it.
This juniper flavoured spirit is taking the world by storm and it’s become very much in vogue to jazz up a standard bar order by either infusing the gin or by making the tonic from scratch.

Ginopolis has recently applied for a licence from Manchester City Council to sell booze. It’s set to be a quirky new Northern Quarter gin joint and the director Paul Schofield claims that they will serve up ‘a lot of gin and probably quite a few that people won’t have heard of before,’
