As you walk/run/bus and tram it to work, it’s quite hard not to notice an abundance of people out on the streets running and cycling or keeping fit in some shape or form. Maybe it’s the lure of the summer holiday coming up or the excitement of losing a few extra pounds for a special occasion. My pre-season training with rugby is now in full swing at Burnage and I wanted to share a recipe that’s low in fat, full of good stuff and really tasty. I know that if I don’t eat right, my training sessions are going to hurt a lot more!

So, I’ve made a little marinade that you can use with anything – cod, chicken, salmon, halibut or beef. Marinade whatever you want for up to 3 days and either roast it or BBQ it.
FFB tip – Swap the cayenne and chilli powder for a little smoked paprika if you are not a spicy fan.
- 4 portions of your choice
- 4 tbsp rapeseed oil (I use rapeseed oil because it has the lowest amount of saturated fats and a lot of it is produced in Lancashire!)
- Pinch cayenne
- Pinch chilli powder
- 2 cloves of garlic, crushed
- Small pinch coriander seed, crushed
- Small pinch fennel seed, crushed
- Zest of 1 lemon
- Pinch chopped parsley or coriander
- A little salt and black pepper
For the other bits-
- 4 medium sweet potatoes
- 4 small bunches of stem broccoli
Put the sweet potatoes straight in the oven and leave them for at least 2 hours or until the natural honey like stuff starts to seep out, cool then slightly and scoop out the insides and put into a bowl to mix well and season.
Chop the tails off the broccoli and steam or boil them until just cooked.
It’s a really easy recipe, it’s my go-to healthy dinner recipe. You can add a little dressing if you like or have a salad on the side or instead of the broccoli. Simple, healthy and damn tasty!
