Cocktails made from ingredients destined for landfill are being served at this Manchester bar

Green topics such as sustainability, recycling and clean energy have all made their way into the spotlight recently.

Headlines in the national media have warned that we have just 12 years to limit the catastrophic effects of climate change, spurring on businesses to come up with solutions to help tackle the issue.

Spinningfields bar The Refinery is one business doing its bit to make a difference. It’s teaming up with reuse revolutionaries KeepCup and vodka brand Ketel One to launch a limited edition cocktail menu that promotes sustainable living as well as encouraging eco-friendly practices in the hospitality industry.

Using ingredients that would have otherwise been destined for landfill, The Refinery has teamed up with leading bartender and Ketel One brand ambassador Kate Jackson to put together tasty concoctions made with care.

Kate has worked closely with the bar and chef teams at The Refinery to identify leftover ingredients from the kitchen to curate this limited edition menu.

Using ‘wonky’ fruit and veg and citrus waste to add flavour and spent coffee granules and champagne that’s lost its fizz to create flavoursome homemade syrups, each recipe has been skilfully crafted to minimise waste and maximise flavour.

Drinks on offer include two variations on the classic Bloody Mary – a Veg Patch Mary (carrots, tomatoes and beetroot) and a Green Mary, which uses wilting greens like rocket, spinach, basil and mint which are then paired with pineapple and jalapenos for a lighter take on the original.

The Afternoon Delight uses left-over coffee grounds to create a bittersweet and citrusy drink by pairing them with orange and tonic to offer a perfect late afternoon transition from coffee to cocktail.

There’s also a Citrus Soda which pairs leftover citrus fruit with Ketel One’s flavoursome Citroen vodka for a light and refreshing tipple, and the Peachy Keen – a peachy twist on a mojito sweetened with champagne syrup.

Ketel One Vodka has also collaborated with KeepCup to offer a free Espresso Martini when purchasing a KeepCup at a reduced cost of £10 from the Refinery whilst the menu is running.
