Wood-fired pizza vendor brings a taste of Naples to New Bailey

I Knead Pizza is the latest street food vendor to open at New Bailey, the riverside development on the Manchester and Salford border.

Paul Corrigan is serving up a variety of fresh pizzas from his distinctive orange truck. He’s a regular at local food fairs like Stockport’s Foodie Friday and is set to join Manchester’s Grub events over the next few months.

Before setting up I Knead Pizza in June 2015, he worked for a charity but left to commit full-time to his new business.

He launched his pizza business on the back of his love of home baking. The pizzas are baked on site in a traditional wood-fired oven. He only uses high quality, fresh ingredients. All sauces are homemade and the hand-stretched pizza bases cater to vegetarian, vegan and gluten-free diets.

We popped down on a gloriously sunny lunchtime to give the pizzas a try. The lunch menu includes rotating pizzas like classics pepperoni and margherita and specials like n’duja and Taste of Honey.

There was already a small queue forming and, although he can only make one pizza at a time, they only take a couple of minutes to make so we didn’t have to wait too long.

We ordered a 10″ pepperoni pizza (£6) which packed a good spicy punch and a 10″ vegetarian special (£7) which came with olives, caramelised onion and goats cheese.

Our verdict? A thumbs up for some decent fast-food pizza made with very good dough. Especially lovely sat outside on a nice day. Just close your eyes, enjoy the sunshine and imagine you’re in Naples.

The semi-permanent pop-up will remain a fixture for the next three months and will cater to the morning crowd with avocado or bacon sourdough sandwiches cooked in the wood fired oven.
